Ingredients

  • 1 onion
  • 2 carrots
  • 200 g celery root
  • 300 g potatoes
  • 1 stalk leek
  • 1 tbsp oil
  • 800 ml vegetable broth
  • 1 bay leaf
  • 3 Juniper berries
  • Salt
  • Pepper (freshly ground)
  • 400 g Peas (frozen)
  • 50 g whipping cream
  • 2 tbsp chopped parsley
  • 2 frankfurter sausages

Instructions

    Peel and roughly dice the onion. Wash, peel, and cut the vegetables into large cubes.

    Heat oil in a soup pot. Sauté the onion, then briefly steam the vegetables. Add broth. Add bay leaf and juniper berries, simmer for 10 minutes. Add 300 g peas and simmer for another 10 minutes. Slice the sausages. Remove bay leaf and junipers from the soup, stir in cream, and blend everything finely. Season with salt and pepper. Add remaining peas and sausages, heat again for 5 minutes. Serve sprinkled with parsley.
