Ingredients

  • 600 g rice (steamed)
  • 1 Zucchini
  • 2 bell peppers (red and yellow)
  • 1 bunch scallions
  • 1 Garlic clove
  • 1 bunch parsley (chopped)
  • 4 tbsp white wine vinegar
  • 4 tbsp olive oil
  • Sea salt

Instructions

    Wash, trim, quarter the zucchini lengthwise and slice into rounds.

    Wash, halve, trim, and dice the bell peppers.

  3. 3.

    Wash, trim, and cut the scallions into thin rings.

    Peel the garlic and finely mince it.

    Combine all ingredients with vinegar and oil, let sit for about 20 minutes. Season with sea salt and serve.
