Vegetable Patties

The vegetable patties from Spoonsparrow are quick to make and work just as well in the air fryer as in the oven.

Ingredients

  • 3 carrots (100 g each)
  • 1 broccoli (500 g)
  • 1 Garlic clove
  • 50 g Grana Padano (32 % fat in solids)
  • 2 Eggs
  • 4 Tbsp oatmeal flakes (15 g each)
  • 2 Tbsp spelt flour type 630 (15 g each)
  • Salt
  • Pepper
  • a handful parsley
  • 1 tbsp Lemon Juice
  • 100 g yogurt (3.5 % fat)

    For the vegetable patties, peel and grate the carrots finely. Wash, dry with a towel, and grate the broccoli finely as well. Peel and finely chop the garlic, then add it to the grated carrots and broccoli in a bowl. Grate the Grana Padano and mix it with the eggs, oatmeal flakes, and spelt flour. Season with salt and pepper, knead the mixture, and shape into equal-sized patties using wet hands. Place them on parchment paper in the air fryer for 15 minutes at 180 °C.

    Meanwhile, wash, dry, and finely chop parsley for the dip, then mix it with lemon juice and yogurt. Season with salt and pepper. Serve the finished vegetable patties with the yogurt dip.
