Ingredients

  • 500 g Brussels sprouts
  • 400 g spaghetti
  • Salt
  • 400 g Tomatoes
  • 40 g pine nuts
  • 2 tbsp olive oil
  • pepper (ground)
  • 2 pinch nutmeg powder
  • 30 g grated Parmesan

Instructions

    Clean the Brussels sprouts and slice them in half. Break the spaghetti into small pieces and cook according to package instructions in boiling salted water. Drain and set aside. Meanwhile, remove stems from tomatoes and blanch for about 30 seconds in boiling water. Rinse cold, peel skins off, and cut tomatoes into thin strips.

    Toast the pine nuts in a dry pan. Heat olive oil in a large skillet and sauté the Brussels sprouts for 1–2 minutes. Cover with a little water and simmer until the liquid has almost evaporated. Add the tomatoes, season with salt, pepper, and nutmeg, and cook for about 3 more minutes, stirring occasionally.

    Add the spaghetti, pine nuts, and parmesan to the skillet and toss everything together. Warm briefly, then serve in deep bowls while hot.
