Ingredients

  • 400 g pappardelle
  • Salt
  • 500 g mixed mushrooms (e.g., button, brown, porcini, chanterelles, etc.)
  • 1 Garlic clove
  • 1 Shallot
  • 2 tbsp olive oil
  • pepper (ground)
  • 1 tbsp freshly chopped parsley
  • 3 tbsp freshly grated Parmesan
  • Cress (for garnish)

Instructions

    Cook the pasta in boiling salted water until al dente.

    Clean the mushrooms, wipe them with a kitchen towel, and slice or cut into strips. Peel the garlic and shallot, finely chop them, and sauté in a hot pan with oil until translucent. Add the mushrooms and cook until the released liquid has evaporated. Season with salt and pepper, drain the pasta, combine it with the mushroom mixture, and stir in parsley and Parmesan. Plate on warmed dishes and serve garnished with cress.
