Vegetable Frittata

Ingredients

  • 1 onion
  • 1 small zucchini
  • 2 bell peppers (red and yellow)
  • 4 tbsp olive oil
  • 6 Eggs
  • 50 ml heavy cream
  • 60 g grated Manchego (or Parmesan)
  • Salt
  • ground pepper
  • paprika powder (sweet)
  • a pinch of chili flakes

Instructions

    Preheat the oven to 180°C fan-forced.

    Peel the onion and slice it into strips. Wash, trim and shave the zucchini into thin slices. Wash, halve, trim and cut the bell peppers into strips. Sauté the onions and peppers in hot oil in a non-stick, oven-safe pan for 3-4 minutes, stirring occasionally. Add the zucchini and cook briefly more. Whisk the eggs with the cream, cheese, salt, pepper, paprika and chili and pour over the vegetables. Let it set slightly, then bake in the oven for about 15 minutes until done.
