Ingredients
- 600 g waxy potatoes
- Salt
- 1 onion
- 150 g ham
- 2 Tomatoes
- 100 g mushrooms
- 7 eggs
- 4 tbsp heavy cream (at least 30% fat)
- 1 tbsp freshly chopped parsley
- 2 tbsp olive oil
- Salt
- pepper (ground)

Wash the potatoes and cook them in salted water for about 30 minutes until tender. Let cool, peel, and dice. Preheat the oven to 180°C fan. Peel and dice the onion. Slice the ham into strips. Wash the tomatoes, cut off the stems, and slice them. Clean the mushrooms and slice them as well.

Whisk the eggs with the cream and parsley, season with salt and pepper. Sauté the onion and ham in hot oil. Add the mushrooms and cook for 1-2 minutes, seasoning again. Add the potatoes and pour the egg mixture over everything. Arrange the tomato slices on top and bake in the preheated oven for 15–20 minutes until golden brown. Cut into pieces and serve.
