Vegetable Fried Rice with Peanut Sauce and Tofu

Ingredients
- 250 g Basmati rice
- 4 Carrots
- 1 bunch spring onions
- 400 g Frozen peas
- Salt
- 10 g ginger
- 1 Garlic clove
- 2 tbsp sesame oil
- Pepper
- 400 g Tofu
- 0.5 tsp ground coriander seeds
- 45 g Peanuts
- 1 tbsp Peanut butter
- 2 tbsp Soy sauce
- 3 tbsp Lime juice
- 2 tsp Sesame seeds
- 1 small red chili
- 1 handful Coriander
Instructions

Cook rice in 2.5 times the amount of salted water according to package instructions for about 15 minutes. Then drain, spread out and let cool.

Meanwhile, peel, scale, halve lengthwise and slice carrots. Wash and diagonally slice spring onions into 3 cm pieces. Cook peas in boiling salted water for 5 minutes, drain, shock and drain. In the meantime, peel and chop ginger and garlic.

Heat 1 tbsp of oil in a pan, sauté ginger, garlic and carrots for 5 minutes over medium heat. Then add spring onions, peas and rice and sauté for another 5 minutes. Season with salt and pepper.

Meanwhile, cut tofu into cubes, heat the remaining oil in a pan and fry the tofu on all sides over high heat for 5 minutes. Season with salt, pepper and coriander.

For the sauce, chop peanuts. Whisk peanut butter with soy sauce, lime juice and 3 tbsp of water. Mix with half of the chopped peanuts and sesame seeds. Season with pepper.

Wash and slice the chili. Wash, shake dry and pluck the leaves from the coriander. Arrange fried rice on four plates, drizzle with sauce, and sprinkle with the remaining nuts, chili and coriander.
