Avocado Pasta with Shrimp
Avocado Pasta with Shrimp: Avocado, cherry tomatoes and shrimp – a feast!
Ingredients
- 250 g whole wheat spaghetti
- Salt
- 1 Avocado
- 20 g arugula (0.25 bunch)
- 1 Lime
- 2 tbsp olive oil
- 200 g shrimp (peeled, frozen)
- 1 clove garlic
- 200 g Cherry tomatoes
- Pepper
- chili flakes
Instructions

Cook spaghetti according to package directions in plenty of boiling salted water until al dente. Drain.

Meanwhile, halve the avocado, remove the pit and scoop out the flesh. Wash and spin dry the arugula. Halve the lime and squeeze out the juice. Blend avocado, arugula, lime juice and 1 tbsp olive oil in a food processor until creamy. Add a little water if needed.

Rinse the shrimp under cold water and pat dry. Peel and chop the garlic. Wash the tomatoes. Heat the remaining oil in a pan and sauté the shrimp on all sides over medium-high heat for 1-2 minutes. Add the garlic and tomatoes and cook for another 2-3 minutes.

Mix spaghetti with avocado pesto and season with salt, pepper and chili flakes. Serve avocado pasta with shrimp and garnish with arugula if desired.
