Vegetable Fish Stew

Ingredients

  • 2 onions
  • 1 stalk leek
  • 2 carrots
  • 2 tbsp olive oil
  • 1 can peeled tomatoes
  • 250 ml vegetable broth (from a jar)
  • 250 g Atlantic cod (or cod fillets)
  • juice of one lemon
  • oregano
  • salt (pepper)
  • 0.5 bunch Basil

Instructions

    Peel and finely dice onions; peel, wash, and cut carrots into large pieces. Clean and slice leek into rings.

    Heat oil, sauté vegetables for 4 minutes, then add tomatoes and pour in vegetable broth. Add oregano, salt, and pepper, simmer gently for 10 minutes.

    Drizzle fish with lemon juice, season with salt and pepper, cover and marinate for 10 minutes, then cube roughly and warm briefly in the tomato-vegetable mixture. Garnish with basil before serving.
