Simple Vegetarian Vegetable Soup

This simple vegetarian vegetable soup features beans, potatoes and mixed soup vegetables, finished with pesto and parmesan!
Ingredients
- 400 g white beans (1 can)
- 250 g Potatoes
- 300 g mixed frozen soup vegetables
- 1 l vegetable broth
- 1 bay leaf
- Salt
- Pepper (freshly ground)
- 3 tomatoes
- 2 tbsp pesto (jar)
- 40 g Parmesan

Wash, peel and dice the potatoes. Drain the beans in a sieve.

Add the frozen vegetables to a pot. Add the potatoes, beans, bay leaf and broth. Season with salt and pepper, bring to a boil and simmer covered for about 15-20 minutes.

Meanwhile, blanch the tomatoes, peel them, quarter, seed and dice. At the end of cooking, add the tomato cubes to the soup and simmer for another 2 minutes, seasoning again with salt and pepper.

Serve the soup topped with a spoonful of pesto and grated parmesan (grated with a microplane).
