Der Gemüse-Couscoussalat von Spoonsparrow ist schnell gemacht und eignet sich gut zum Mitnehmen ins Büro oder zum Picknick.

Ingredients

  • 400 g couscous
  • 3 tomatoes
  • 2 Spring Onions
  • 2 Garlic cloves
  • 1 red bell pepper
  • 125 g cucumber
  • 2 tbsp sunflower seeds
  • 0.5 tsp finely chopped red chili peppers
  • 4 tbsp olive oil
  • 4 tbsp Lemon juice
  • 1 tbsp white balsamic vinegar (Aceto balsamico bianco)
  • Salt
  • Pepper (from the grinder)
  • 1 tsp liquid honey

Instructions

    Whisk olive oil, lemon juice, vinegar, honey, salt, pepper and chili into a dressing and marinate the vegetables with it. Gently fold in the couscous, plate the salad and sprinkle sunflower seeds on top before serving.
