Ingredients

  • 350 g Israeli couscous (Ptitim)
  • Salt
  • 1 young zucchini
  • 3 bell peppers (red, yellow, green)
  • 2 sprigs parsley
  • 2 tbsp sesame oil
  • 0.5 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.5 tsp paprika powder
  • a pinch cinnamon
  • a pinch cayenne pepper
  • 2 tbsp apple balsamic vinegar
  • 2 tbsp lemon juice
  • 2 tbsp olive oil

Instructions

    Cook the Ptitim in boiling salted water for about 15 minutes, drain and set aside.

    Wash, trim, and dice the zucchini. Wash, trim, and dice the peppers. Rinse the parsley, dry, and chop the leaves.

    Add the oil to a hot pan and sprinkle in the spices. Sauté over medium heat briefly, then add the vegetables and couscous. Mix in the vinegar, lemon juice, and olive oil, season with salt. Let cool slightly, taste, and serve sprinkled with parsley.
