Vegetable Casserole with Cheese

Ingredients
- 3 medium zucchini
- 200 g Green beans
- 200 g spinach leaves
- 1 tbsp chopped parsley
- 1 tbsp chopped dill
- 1 tbsp chopped mint
- 3 slices white loaf bread
- 125 g feta cheese
- 100 g grated Gruyère cheese
- 6 Eggs
- Salt
- Pepper (freshly ground)
- 1 tbsp Olive Oil
- 1 tbsp Sesame seeds

Wash and trim the zucchini, then blanch with the beans in boiling salted water for 5 minutes; drain, shock in ice water, and let cool. Wash, trim, and wilt the spinach in a little boiling salted water until it wilts; drain, shock, and squeeze out excess moisture.

Finely chop the zucchini, beans, and spinach and mix them with the herbs in a bowl.

Toast the bread, cube it, and add to the bowl. Crumble the feta and combine with the grated cheese over the bread.

Beat the eggs with salt and pepper, pour into the bread-cheese mixture, stir, then fold in the vegetables. Grease a large baking dish (or four small ones) with olive oil, spread the vegetable mix evenly, smooth the top, and bake in a preheated oven at 200 °C for about 35 minutes until golden.

Serve hot, optionally garnished with fresh herbs or extra cheese.
