Ingredients
- 600 g sheep cheese
- 400 g cherry tomatoes
- 4 Spring Onions
- 2 stems basil
- 2 stems Parsley
- 8 tbsp olive oil
- 3 tbsp white balsamic vinegar
- Salt
- Pepper (freshly ground)

Preheat the oven to 200°C with upper and lower heat. Cut the sheep cheese in half and arrange it in a tiled pattern in a baking dish. Wash the tomatoes, cut the larger ones in halves. Wash the spring onions, shake dry and slice into rings. Wash the basil and parsley, shake dry, pluck the leaves and roughly chop them.

Mix the oil with vinegar, spring onions and herbs, season with salt and pepper. Spread the tomatoes over the sheep cheese and pour the dressing on top. Bake in the preheated oven for 25-30 minutes. Remove and serve immediately.
