Pasta with fish and parsley from Spoonsparrow: Quick report from Neptune's realm

Ingredients

  • 2 cloves garlic
  • 400 g fish fillet (e.g., pollock)
  • 4 tbsp olive oil
  • 400 g Whole Wheat Spaghetti
  • Salt
  • 50 ml white wine (or vegetable broth)
  • 1 bunch parsley
  • freshly ground pepper
  • 40 g Parmesan

Instructions

    Peel the garlic and slice it into thin rounds. Rinse the fish fillet in cold water, pat dry, and cut into cubes. Heat 2 tablespoons of oil in a pan.

    Add the fish pieces and garlic to the pan and fry until golden brown.

    Meanwhile, cook the pasta according to package instructions in plenty of boiling salted water until al dente. Drain and set aside.

    Deglaze the pan with white wine (or broth) and let it reduce briefly. Return the cooked pasta to the pan and toss gently.

    Wash the parsley, shake off excess water, and roughly chop the leaves. Season the fish and pasta mixture with salt and pepper, plate it, sprinkle parsley over the top, and grate Parmesan on top.
