Ingredients

  • 200 g carrots
  • 200 g parsley root
  • 200 g celery stalks
  • 4 tbsp plant oil
  • 100 ml broth
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp freshly chopped dill
  • 4 white bratwursts

Instructions

    Peel, wash, and trim the carrots and parsley roots; cut into fine julienne strips. Wash, trim, and julienne the celery stalks as well.

    In a hot pan with 2 tbsp oil, sauté the vegetable strips, pour in the broth, season with salt and pepper, and simmer over medium heat for about 5 minutes until the liquid has almost completely evaporated. Stir in dill and adjust seasoning with salt and pepper.

    In a hot grill pan with the remaining oil, brown the bratwursts all around until golden brown. Arrange on preheated plates with the vegetables and serve with mashed potatoes if desired.
