Vegan Vanilla Shortbread Dessert with Orange

Ingredients

  • 1 Vanilla bean
  • 400 g silken tofu
  • 2 tbsp brown almond butter
  • 2 tbsp almond flour
  • 3 tbsp date syrup
  • a pinch of salt
  • 200 g unpeeled almonds
  • 2 oranges

Instructions

    Split the vanilla bean lengthwise and scrape out the seeds. Blend the silken tofu with almond butter, almond flour, syrup, vanilla seeds, and salt until a smooth cream forms.

    Toast the almonds in a dry pan over medium heat until fragrant, then let them cool. Grind 150 g of the toasted almonds in a high-powered blender and stir into the cream; reserve the remaining almonds for coarse chopping.

    Peel the oranges, cut eight slices from one orange, and set aside. Dice the rest of the fruit finely.

    Layer alternating sheets of cream, orange cubes, and roasted almonds in glasses, finishing with a layer of cream. Garnish with orange slices and chopped almonds before serving.
