Vegan Quark Fritters with Apple Compote

Vegan quark fritters with apple compote from Spoonsparrow are high in protein and truly comforting.

Ingredients

  • 600 g Potatoes
  • 4 tbsp Soy quark
  • 4 tbsp Raw cane sugar
  • 3 tbsp Raisins
  • 130 g Spelt flour Type 1050
  • 2 tbsp Soy flour
  • Salt
  • 1 tbsp lime juice
  • 2 tbsp Rapeseed oil
  • 2 Apples
  • Pinch of cinnamon

Instructions

    Boil the potatoes in boiling water for 15-20 minutes until soft, drain, and let cool. Peel the potatoes, mash them with a potato masher, and place them in a bowl.

    Add the soy quark, 2 tbsp sugar, raisins, spelt flour, soy flour, salt, and lime juice to the potatoes and mix everything into a smooth dough. Shape 12 cookies from the dough with damp hands. Heat oil in a pan, fry the quark fritters golden brown on both sides for 5 minutes over medium heat, and keep them warm in the oven.

    Meanwhile, wash, halve, core, and chop the apples. Sauté the apples in a pot with 1 tbsp sugar and cinnamon for 6 minutes over medium heat. Then add 50 ml of water and simmer for 5 minutes. Then serve the quark fritters with apple compote and sprinkled with the remaining sugar.
