Vegan Peanut Cookies with Vanilla
Vegan peanut cookies from Spoonsparrow: The treat comes completely without refined sugar!
Ingredients
- 1 tbsp flaxseed (10 g)
- 90 g roasted salted peanuts
- 1 Vanilla bean
- 90 g vegan margarine
- 90 g whole grain sugar
- 250 g spelt flour Type 1050
- 1 tsp Baking powder
- 50 g crunchy peanut butter

First, grind the flaxseeds in a blender and soak them in 3 tbsp water.

Meanwhile, roughly chop the peanuts. Split the vanilla bean lengthwise and scrape out the seeds with a knife.

Whisk the margarine with 75 g whole grain sugar until fluffy. Mix the flour, baking powder, and vanilla seeds together and stir into the margarine-sugar mixture along with flaxseed and peanut butter. Knead everything with 1–2 tbsp water into a smooth dough and cover for 30 minutes in the fridge.

Line a baking sheet with parchment paper. Shape the dough into a roll, cut about 1 cm thick slices, and place them on the sheet. Press a few peanuts onto each cookie and sprinkle with remaining whole grain sugar. Bake the vegan peanut cookies in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 13–15 minutes.
