Jam Cookies Basic Recipe

Ingredients
- 375 g spelt flour
- 200 g whole cane sugar
- 1 pinch salt
- 2 tsp vanilla sugar
- 0.5 lemon (unprocessed)
- 100 g peeled almond kernels (ground)
- 250 g butter
- 150 g currant jam

Mix spelt flour with whole cane sugar, salt, vanilla sugar and ground almonds. Wash the lemon hot and dry rub it. Grate the zest and add to the other ingredients. Add butter and knead everything into a smooth dough. Wrap the dough in cling film and refrigerate for 30 minutes.

Preheat oven to 180 °C (fan 160 °C; gas: level 2‑3). Line a baking tray with parchment paper.

Roll out the dough on a floured surface to 0.3 cm thickness, cut squares with a 2‑cm cutter. Cut small shapes in the middle of half the squares. Place cookies on a tray, bake for about 10 minutes until golden yellow and cool on a wire rack.

Warm the jam in a pot over low heat. Brush the underside of each whole cookie with jam and place a cut-out cookie on top. Let jam cookies fully cool before packaging and let them dry for several hours.
