Vegan Celery Noodles "Carbonara"

A fresh Italian-inspired vegan dish featuring spiralized celery noodles tossed with smoked tofu and a creamy oat sauce. Enjoy this hearty lunch or dinner option.

Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 750 g celery root
  • 125 g smoked tofu
  • Salt
  • 3 tbsp Rapeseed oil
  • 100 ml Vegetable broth
  • 150 g oat cream
  • Pepper
  • 1 pinch cayenne pepper
  • nutmeg
  • 1 tbsp Lemon Juice
  • a handful parsley

Instructions

    Peel and chop the shallot and garlic. Peel the celery root and spiralize into noodles using a spiralizer. Cut the tofu into small cubes.

    Cook the celery noodles in boiling salted water for 2 minutes, then drain and set aside. Heat oil in a pan. Fry the tofu for 5 minutes over medium heat. Add the shallot and garlic and sauté for 4 more minutes.

    Add the drained noodles to the pan and stir-fry for another 2–3 minutes. Pour in the broth and oat cream, season with salt, pepper, cayenne pepper, freshly grated nutmeg, and lemon juice, then taste and adjust seasoning.

    For serving, wash, dry, and chop parsley, then sprinkle over the noodles.
