Ingredients

  • 1 small onion
  • 1 tbsp Rapeseed Oil
  • 200 g tofu
  • 2 tart apples
  • Salt
  • 1 tsp freshly grated horseradish
  • 1 tsp lemon juice
  • 4 slices pumpernickel bread
  • 2 tbsp freshly chopped parsley

Instructions

    Peel and finely chop the onion. Sauté in hot oil in a pan until translucent. Dice the tofu. Peel an apple, remove the core, and dice it small. Add the tofu to the onions and simmer without color for about 5 minutes until soft. Then blend everything together until smooth. Season with salt and horseradish and taste. Let cool.

    Wash the remaining apple, dice it, and drizzle with lemon juice.

    Spread the cream on the bread slices and top with apples and parsley before serving.
