Ingredients

  • 100 g walnut kernels
  • 50 g peanut kernels
  • 50 g dates (pitted)
  • 75 g raisins
  • 40 g flour
  • 40 g coconut flakes
  • 20 g sesame seeds
  • 200 g soft rolled oats
  • 100 g steel‑cut oats
  • 200 g rice syrup
  • 100 g brown sugar
  • 1 tsp salt
  • 100 ml soy cream
  • 75 g coconut oil
  • 200 g smooth peanut butter

Instructions

    Preheat the oven to 160 °C.

    Finely chop the walnuts, peanuts and dates, then combine with raisins in a bowl. Mix in the flour, coconut flakes, sesame seeds, and both types of oats. In a saucepan, slowly heat the rice syrup with sugar, salt, soy cream, coconut oil, and peanut butter while stirring until dissolved. Pour over the granola mixture and stir thoroughly.

    Fill a parchment‑lined baking pan with the mixture and spread evenly. Bake in the oven for 25–30 minutes until golden brown. Remove and cool on the pan, then transfer to a cutting board to cool completely before slicing into bars.
