Vegan French Toast

Whether for breakfast or dinner, this vegan French toast is always a good idea.

Ingredients

  • 170 ml soy drink (soy milk) (alternatively oat or rice milk)
  • 3 Tbsp rice flour (≈15 g)
  • 1 tsp cinnamon
  • 2 tbsp Maple syrup
  • 4 slices whole‑grain toast
  • 2 tsp coconut oil
  • 1 Banana
  • 60 g coconut yogurt
  • 1 pinch Vanilla powder
  • 2 Tbsp chopped pistachios (≈15 g)

Instructions

    Whisk the soy drink with rice flour, cinnamon, and 1½ Tbsp maple syrup in a bowl. Dip each toast slice on both sides into the mixture.

    Heat coconut oil in a skillet over medium heat and fry the toast slices one at a time for about 4–5 minutes per side until golden brown, turning regularly.

    Meanwhile, peel the banana and cut it into thin rings. In a small bowl mix coconut yogurt, vanilla powder, and the remaining maple syrup.

    Arrange two toasted slices on each plate and garnish the vegan French toast with coconut yogurt, banana rings, and pistachios.
