Vegan Chocolate Crepe with Orange Sauce

Ingredients

  • 100 g flour
  • 25 g cocoa powder
  • 125 ml soy drink (soy milk) (chocolate)
  • 125 ml mineral water
  • 1 tbsp Sunflower oil
  • 0.5 pinch salt
  • 1 tsp vanilla sugar
  • sunflower oil (for frying)
  • 4 tbsp sugar
  • 1 tbsp margarine
  • 50 ml Soy cream
  • 150 ml orange juice
  • powdered sugar (for dusting)
  • orange slice (for garnish)

Instructions

    Whisk the flour with cocoa, milk, mineral water, oil, salt and vanilla sugar until smooth, no lumps. Cover and let rest at least 1 hour.

    For the orange sauce caramelize the sugar in a pot, add margarine, stir, then deglaze with cream and orange juice. Reduce heat and simmer until thickened. Remove from heat and cool.

    Whisk the batter again, adding more milk if needed. Pour a small amount into a lightly oiled pan and cook about 1 minute. Flip and finish cooking on the second side. Repeat for all crepes.

    Place two folded crepes on each plate and spoon 1-2 tbsp orange sauce over them. Dust with powdered sugar and garnish with an orange slice before serving.
