Ingredients

  • 80 g flour
  • 1 tsp vanilla sugar
  • 3 eggs
  • 100 ml milk
  • 100 ml sparkling water
  • butter (for frying)
  • currants
  • blueberries
  • 200 g wild strawberries
  • 150 g raspberries
  • 1 packet vanilla sugar
  • 0.125 l currant juice
  • powdered sugar (for dusting)

Instructions

    Whisk the listed ingredients quickly into a batter, let rest 15 minutes. For the filling, wash the berries and halve large strawberries. Place in a pot, sprinkle with vanilla sugar, pour in juice, and gently simmer for 5 minutes.

    Heat butter in a non‑stick pan and cook portions of batter into eight thin pancakes. Spoon a dollop of berry jam onto each, fold the crepes, and dust with powdered sugar.
