Bread Salad with Smoked Potatoes

Ingredients
- 700 g waxy potatoes
- Plant oil (for the rack)
- 0.5 cucumber
- 2 stalks celery
- 1 handful coriander leaves
- 2 handful parsley
- 4 slices mixed bread
- 3 Garlic cloves
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt
- Pepper (freshly ground)
- 2 tbsp sesame seeds
Instructions

Preheat a smoker to 100 °C. Wash the potatoes thoroughly and pat dry. Place them on a lightly oiled rack and smoke in the oven for about 45 minutes. Remove, let cool, then cut into strips.

Peel the cucumber and dice finely. Wash, trim, and dice the celery similarly. Rinse coriander and parsley, shake dry, optionally leave some stems whole for garnish and chop the rest finely.

Cut the bread into large cubes. Peel the garlic. Heat oil in a pan and press the garlic cloves into it. Add the bread cubes and fry until crisp.

Remove the bread and combine with the vegetables, herbs, and potatoes in a bowl. Sprinkle lemon juice, salt, pepper, and sesame seeds; taste and adjust seasoning. Garnish with remaining herbs and serve.
