Ingredients

  • 10 g mushrooms (per medallion, seasonal mushrooms)
  • 2 veal medallions (about 100 g each)
  • butter clarified butter
  • Salt
  • pepper (ground)
  • wine and heavy cream
  • chopped herbs

Instructions

    Clean the mushrooms, trim ends, and chop if desired. Quickly sauté mushrooms in hot clarified butter, seasoning with salt and pepper.

    Season veal medallions with salt and pepper; cook in not too hot clarified butter for 2–4 minutes per side according to preference. Wrap in foil and rest in a warm oven (50 °C) for about 5 minutes. Deglaze the pan with a splash of wine, reduce slightly, add cream, season with salt and pepper, and stir in herbs. For serving place veal medallions on preheated plates, distribute mushrooms over them. Add the browned sauce from the foil to the cream sauce, whisk if desired, and pour over the medallions.
