Veal Roulades

Ingredients

  • 8 thin veal cutlets (about 160 g each)
  • Salt
  • Pepper (freshly ground)
  • 8 slices Parma ham
  • 16 sage leaves
  • 1 tbsp butter
  • 2 tbsp olive oil
  • 150 ml meat broth
  • 0.5 iceberg lettuce

Instructions

    Season the cutlets with salt and pepper, top each with a slice of Parma ham and two sage leaves, then roll up and secure with toothpicks.

    Heat butter and olive oil in a large pan over high heat; quickly brown the veal roulades all sides. Add broth, cover, and simmer for about 10 minutes.
