Veal Schnitzel with Lime Sauce

Ingredients
- 500 g broccoli
- salt, freshly ground white pepper
- 1 EL oil
- 1 EL Butter
- 4 limes
- 4 thin veal schnitzels (80g each)
- 125 ml clear broth
- pickled green peppercorns

Clean the broccoli and cut into florets. Steam in lightly salted water for 3-4 minutes.

Wash limes under hot water, dry them, grate the zest of one lime thinly, juice three limes. Cut veal schnitzels crosswise in half and season with salt and pepper.

Heat oil and butter in a pan and brown the schnitzels on both sides. Remove and keep warm.

Deglaze the pan with broth and lime juice, add half of the grated zest, let the sauce reduce slightly. Season with salt and stir in green peppercorns. Slice the remaining lime thinly. Plate the schnitzels with sauce and lime slices, garnish with leftover zest. Serve with broccoli.
