Ingredients
- 1 gargekochter Tafelspitz (about 800 g, preferably from the day before)
- 4 tbsp Remoulade (from the jar)
- Sunflower oil (cold pressed)
- white wine vinegar
- Salt
- Pepper (freshly ground)
- Carrots (thinly sliced)
- Celery (thinly sliced)
- 1 yellow bell pepper (thinly sliced)
- 1 piece horseradish root (peeled)

Slice the meat into very thin strips with a sharp knife. Whisk 5 tbsp sunflower oil, 3 tbsp vinegar, salt and pepper vigorously. Drizzle the vinaigrette over the meat slices and let stand for 1 hour.

Arrange the raw vegetable strips on plates. Grate horseradish over as desired, add a dollop of remoulade sauce and garnish with chives. Serve with boiled potatoes.
