Veal Roulades en Papillote

Ingredients

  • 800 g veal fillet (or loin)
  • 1 tbsp Medium-hot mustard
  • 3 sprigs sage
  • Pepper (freshly ground)
  • 16 slices Parma ham
  • 8 fresh garlic cloves
  • 4 tbsp olive oil
  • 4 tbsp Lemon juice

Instructions

    Preheat the oven to 200°C fan-forced.

    Rinse the meat, pat dry and slice into 16 thin strips. If necessary, lightly pound flat. Spread a little mustard on each strip. Rinse the sage, shake dry and pluck the leaves. Place 1–2 sage leaves on each cutlet, season with pepper and roll up. Cover again with one sage leaf and wrap in a slice of ham. Arrange four pieces on a sufficiently large sheet of parchment paper. Peel and halve the garlic cloves. Distribute around the roulades. Season with pepper, drizzle with olive oil and lemon juice. Fold the parchment into packets and seal well (e.g., with paper clips). Place on a baking tray and bake in the oven for 15–20 minutes.
