Ingredients

  • 4 cod fillets (about 180 g each)
  • 16 small potatoes
  • 4 Spring Onions
  • 400 g cocktail tomatoes
  • 1 bunch thyme
  • 2 Garlic cloves
  • 1 untreated lemon
  • 100 ml White wine
  • 200 ml chicken stock
  • 2 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Wash and pat dry the cod fillets.

    Wash the potatoes thoroughly, brush if needed, and halve them lengthwise.

  3. 3.

    Wash the spring onions, trim, and cut into pieces about 5 cm long.

    Peel and halve the garlic cloves.

  5. 5.

    Slice the lemon into rounds.

    Sauté the potatoes, garlic, and spring onions in hot olive oil in a roasting pan. Add tomatoes, pour in stock and wine. Cover and simmer gently for about 15 minutes. Then add lemon slices and thyme sprigs. Place the fish on top, season with salt and pepper, and bake in a preheated oven at 180 °C (radiant heat) for about 10–12 minutes until the fish and vegetables are cooked. Finish by seasoning again with salt and pepper and serve on warmed plates.
