Veal Cutlets with Strawberry Sauce

Ingredients

  • 250 g strawberries
  • 1 Red Onion
  • 0.5 tsp green peppercorns (crushed)
  • 1 chili pepper (about ½ tsp)
  • 1 lime (unprocessed)
  • Salt
  • pepper (ground)
  • 4 veal cutlets (150 g each)
  • Salt

  • mild mustard
  • clarified butter (for frying)

Instructions

    Preheat the oven to 100 °C (convection) and keep it warm.

    Wash and quarter the strawberries. Peel the onion and slice into thin half-rings. Finely chop the chili pepper.

    Heat clarified butter in a pan for the veal cutlets. Lightly pound the meat, season, rub with mustard, sear both sides golden brown but not fully cooked, then set aside warm.

    Sauté the prepared salsa ingredients in the drippings, then season with salt and pepper. Plate the strawberry sauce over the veal cutlets and serve immediately.
