Ingredients

  • 600 g cod fillet (skinless, 8 pieces)
  • Salt
  • Pepper
  • 2 tbsp lemon juice
  • 0.5 bunch wild garlic (25 g)
  • 30 g Parmesan (30% fat in solids)
  • 5 tbsp whole wheat breadcrumbs (15 g each)
  • 2 tbsp sesame seeds (15 g each)
  • 1 tsp organic lemon zest
  • 3 tbsp olive oil
  • 2 tbsp coarse mustard (15 g each)

Instructions

    Clean cod fillets, pat dry, season with salt and pepper, drizzle with lemon juice. Place on a baking sheet lined with parchment paper.

    Wash and pat dry wild garlic; set aside about one‑third of the leaves, finely chop the rest. Grate parmesan finely.

    In a deep bowl mix breadcrumbs, parmesan, sesame seeds, lemon zest, chopped wild garlic, 1½ tbsp oil, and mustard. Season lightly with salt and pepper, spread over fish fillets, bake in preheated oven at 220 °C (200 °C fan‑forced; gas: level 4) for 10–15 minutes.

    Meanwhile heat remaining oil in a pan. Sauté wild garlic leaves for 3 minutes over medium heat. Garnish cod fillets with the sautéed leaves before serving.
