  • 2 tbsp Ajvar (or red curry paste)
  • 1 small chili pepper
  • 4 tbsp paprika paste
  • 4 tbsp sesame oil
  • Salt
  • Pepper
  • 2 chicken (cut into 8 pieces each)
  • 4 tbsp yellow curry paste
  • 2 tbsp Light soy sauce
  • 2 tbsp oyster sauce
  • 4 tbsp Honey
  • Salt
  • Pepper
  • mild curry powder
  • 1.5 kg drumsticks and wings
  • 0.5 bunch wild garlic
  • 1 head garlic
  • 4 sprigs Parsley
  • Salt
  • Pepper
  • 6 tbsp oil
  • 6 tbsp honey
  • 1 tbsp paprika powder
  • 1 tbsp Medium-hot mustard

Instructions

  1. 1.

Wash the chili pepper, cut it lengthwise, remove seeds, strip off the white membrane and dice finely. Mix the chili cubes with Ajvar, paprika paste, oil, salt and pepper; rub this mixture onto both sides of the chicken halves and cover with foil to marinate for at least 1 hour before grilling. Grill the chicken halves over low heat slowly for about 15‑20 minutes per side.

  2. 2.

Combine all ingredients for the sauce, taste, then rub the chicken pieces with the sauce and let them marinate for at least 1 hour before grilling. Grill on a medium‑heat grill for about 7 minutes per side.

  3. 3.

Wash the herbs, shake off excess water and roughly chop. Peel the garlic cloves and slice thinly; combine everything with the remaining sauce ingredients and coat the chicken pieces, letting them marinate for at least 1 hour. Cook over high heat for about 3‑4 minutes per side.

  4. 4.

Serve the grilled chicken alongside fresh salads.
