- 2 duck breast fillets (ready to cook, 350 g each)
- 2 tbsp liquid honey
- 250 ml cider
- Salt
- Pepper (freshly ground)
- 200 ml duck stock
- 3 red-skinned apples
- 2 tbsp lemon juice
- 2 tbsp butter

Wash and pat the duck breasts dry. Season the honey with cider, salt, and pepper; marinate the duck breasts covered for about 1 hour.

Preheat the oven to 100°C (212°F) on both top and bottom heat.

Remove the duck breasts from the marinade, drain, pat dry, and sear skin side down in a hot pan without added fat until golden brown. Flip the meat, cook for 1 minute, then transfer to the preheated oven and bake for about 30 minutes.

Meanwhile, mix the remaining marinade with the stock, bring to a boil, and reduce by half. Wash the apples, core them with an apple corer, slice into rounds, halve again, and immediately drizzle with lemon juice. Sauté briefly in hot butter in a pan, drain on kitchen paper, and arrange like roof tiles on plates. Remove the duck breasts from the oven, let rest briefly, slice into portions, and serve alongside the apple slices drizzled with the seasoned sauce.
