Vanilla Semolina Porridge
Vanilla Semolina Porridge with Stewed Apples and Nuts: What could be nicer than being woken up in the morning by the sweet-aromatic scent of semolina porridge?
Ingredients
- 14.1 oz firm red apples (2 medium)
- 1 tbsp honey
- 1 tsp cinnamon
- 1 Vanilla bean
- 15 oz milk (1.5% fat)
- Pinch of salt
- 1.76 oz whole wheat semolina
- 1 tbsp cane sugar
- 1.41 oz walnuts
- Lemon balm (optional)

Wash, quarter, and core the apples. Combine honey, 4 tbsp water, cinnamon, and apples in a pot. Bring to a boil, then reduce heat and simmer for 4-5 minutes.

Meanwhile, split the vanilla bean with a sharp knife and scrape out the seeds. Bring milk, vanilla seeds, and salt to a boil.

Mix semolina and cane sugar. Slowly whisk into the slightly boiling milk, bring back to a boil. Remove pot from heat and let the semolina porridge stand covered for 4 minutes.

Meanwhile, chop the walnuts. Stir the semolina porridge well and fill into bowls. Top with apples and nuts, garnish with lemon balm leaves if desired, and serve.
