Vanilla Pudding

Ingredients

  • 1 Vanilla bean
  • 800 ml milk
  • 80 g sugar
  • 3 tbsp cornstarch
  • 3 eggs
  • 1 pinch salt

Instructions

    Weigh and prepare all ingredients. Split the vanilla bean lengthwise and scrape out the seeds.

    Reserve about 100 ml of the milk. Bring the rest together with the vanilla bean, seeds, and sugar to a boil in a pot.

    Add the remaining cold milk to the cornstarch and whisk until smooth.

    Pour the starch into the boiling milk and cook for 3-5 minutes while stirring constantly with a whisk until creamy.

    Remove the thickened pudding from heat.

    Separate the eggs; beat the yolks into the pudding. Warm briefly again, being careful not to boil so the yolk doesn’t curdle.

    Sift the pudding through a sieve into another bowl.

    Beat the egg whites with salt until stiff and firm. Fold the meringue into the still-hot pudding to create a light, airy cream.

    Spoon the pudding cream into small serving bowls. If you plan to pour it later, rinse the bowls briefly with cold water. To avoid skin, cover the pudding with cling film or dust with powdered sugar. Chill in the refrigerator until ready to serve.
