Honey Cake

- 250 g honey
- 125 g butter
- 150 g sugar
- 500 g flour
- 1 packet baking powder
- 100 g ground almond kernels
- 1 tsp cinnamon
- 1 pinch cloves powder
- 1 pinch allspice
- 1 pinch salt
- 2 Eggs
- 100 g finely chopped lemon zest
- 100 g finely chopped orange zest
- 3 tbsp heavy cream (at least 30% fat)
- 175 g peeled whole almonds
- 40 cherry toppings

Preheat the oven to 180°C (350°F). In a saucepan, melt butter, honey, and sugar while stirring until it boils, then let cool. Combine flour with baking powder, ground almonds, spices, eggs, lemon zest, and orange zest using a hand mixer’s dough hooks.

Add the cooled honey mixture and knead into a smooth dough; if too soft, add a little more flour. Cover and refrigerate for about 1 hour. Press the dough onto a greased baking sheet, smoothing it out. Brush with heavy cream and cut into 4 cm squares.

Decorate each square with four almonds and one cherry. Bake on the middle rack of the preheated oven for 35 minutes until light brown. Remove, let cool slightly, lift from the pan, and divide into the marked squares. Arrange on a serving platter and serve.
