Ingredients
- 125 g quark
- 60 g liquid butter
- 4 tbsp sugar
- 2 tsp grated lemon zest
- 3 eggs
- 200 g Flour
- 125 ml milk
- 1 pinch salt
- butter (for the waffle iron)
- 150 ml whipping cream (at least 30% fat content)
- 100 g crème fraîche
- 1 tbsp powdered sugar
- vanilla aroma (to taste)
- sour cherries (jar)
- 3 tbsp chopped hazelnuts
- mint

For the batter, mix quark with butter, sugar and lemon zest. Separate the eggs; gradually add the yolks to the mixture. Fold in flour, then whisk in milk until a smooth batter forms. Beat egg whites with a pinch of salt until stiff peaks form and fold into the batter.

Grease the waffle iron surfaces with butter, heat, and bake golden‑yellow waffles. Whip cream until stiff, then stir in crème fraîche, powdered sugar and vanilla aroma. Arrange waffles on a plate, spoon vanilla cream over them, garnish with a cherry, chopped hazelnuts and fresh mint, and serve.
