Ingredients

  • 4 tbsp sesame seeds
  • 0.25 ripe avocado
  • 1 tsp lemon juice
  • 1 cucumber piece (10 cm long)
  • 4 lettuce leaves
  • 2 tbsp mayonnaise
  • 2 roasted nori sheets
  • 250 g prepared sushi rice

Instructions

    Toast the sesame seeds in a small dry pan until golden brown, transfer to a plate and let cool.

    Wash the cucumber slice, pat dry, cut lengthwise into halves, remove seeds, then slice into sticks about ½ cm thick with the skin on.

    Peel the avocado quarter and slice lengthwise into strips, immediately drizzle with lemon juice.

    Wash the lettuce leaves, pat dry, spread a thin layer of half the mayonnaise on each leaf and roll them loosely.

    Wrap a bamboo mat with cling film, place one nori sheet smooth side down on it.

    With damp hands spread half the sushi rice over the nori sheet, leaving borders at the edges. Flip the sheet so the rice faces down on the mat. Spread a thin layer of the remaining mayonnaise on the lower third of the sheet, then lay half the lettuce rolls, avocado strips and cucumber sticks on top.

    Roll the rice, nori and filling using the bamboo mat. Repeat with the remaining ingredients to form a second roll.

    Gently coat the rolls in sesame seeds and cut each into six equal pieces.
