Turnip Patties

We love turnips! These delicious turnip patties from Spoonsparrow make the vegetable shine in a new light.
Ingredients
- 900 g turnip (1 turnip)
- 70 g clarified butter
- 200 g boiled potatoes (from yesterday)
- 200 g Low-fat quark
- Salt
- white pepper
- 0.5 tsp dried marjoram
- 2 tbsp chopped parsley
- 40 g breadcrumbs

Wash, peel, quarter and grate the turnip coarsely. Heat 20 g of clarified butter in a pot, sauté the grated turnip while stirring for 3–5 minutes, then let it cool.

Grate or press the boiled potatoes finely. Mix them with the warm turnip mixture. Add quark and process everything into a smooth batter. Season with marjoram, salt, pepper, and parsley.

Shape the dough into 12 flat patties and coat them in breadcrumbs. Heat the remaining clarified butter in a pan. Fry the patties over low heat, about 5 minutes per side, turning them occasionally until golden brown. Serve with a fresh salad.
