Turnip Lentil Stew

Ingredients

  • 100 g green lentils (or Puy lentils)
  • 1 kg turnip
  • 2 green bell peppers
  • 2 onions
  • 1 red chili pepper
  • 3 tbsp oil
  • 1 cinnamon stick
  • 1 l vegetable broth (instant)
  • 1 untreated lime
  • Salt
  • Pepper

Instructions

    Cook the lentils according to package instructions.

    Peel and cube the turnip. Quarter the bell peppers, clean, rinse and cut into pieces. Peel and dice the onions. Clean, rinse and finely dice the chili pepper.

    Heat oil in a large pot. Brown the onions until golden brown. Add cinnamon and chili and sauté briefly. Add the turnip and pour in the broth. Cover and simmer for about 40-45 minutes. About 10 minutes before the end of cooking add the bell peppers.

    Wash the lime, dry it, grate the zest, then squeeze out the juice. Drain the lentils and mix with the lime zest and turnips. Season the stew with salt, pepper and lime juice.
