Green Tomatoes in Tempura Batter

Ingredients

  • 4 large green tomatoes
  • 150 g rice flour (or 75 g wheat flour and 75 g wheat starch)
  • 2 egg whites
  • 0.5 tsp Curry Powder
  • 1 l oil (for frying)
  • 60 g rice flour (for coating)

Instructions

    Wash the tomatoes, cut off the stem ends in a wedge shape and slice into not too thin pieces.

    Sift the rice flour into a bowl. Add the egg whites, ½ tsp salt and curry powder and whisk briskly with a fork. Pour about 200 ml cold water all at once and mix into a smooth batter.

    Heat the oil in a medium pot or deep fryer to about 170°C.

    Coat the tomato slices in rice flour, tap off excess, then dip them through the batter. Let drain and carefully drop portions into the hot oil. Turn occasionally with a slotted spoon and fry evenly for 3‑4 minutes until golden brown. Remove with the spoon, let drain on paper towels. Repeat for all slices.
