Turkish-Style Pizza (Lahmacun)

Ingredients

  • 220 g whole wheat flour
  • 1 tsp dry yeast
  • 0.5 tsp honey
  • 0.5 tsp Salt
  • 4 tbsp olive oil
  • 2 onions
  • 2 Garlic cloves
  • 500 g ground lamb
  • 1 tsp cumin (ground)
  • 0.5 tsp cinnamon
  • 2 tbsp Tomato paste
  • 350 g diced tomatoes (canned)
  • 2 stalks coriander leaves
  • 2 tbsp pine nuts
  • 2 stalks Parsley

    For the dough, knead flour, dry yeast, honey, salt and 2 tbsp olive oil into a smooth dough and let it rise covered in a warm place for about 1 hour.

    For the topping, peel and finely chop onions and garlic. Brown ground lamb in remaining hot oil until crumbly. Add onions and garlic and cook together. Stir in cumin and cinnamon. Add tomato paste, cook briefly, then add tomatoes. Simmer with occasional stirring for about 15 minutes until thickened. Finally wash, dry, chop coriander and mix in; season the mixture with salt and let cool.

    Knead dough on a floured surface. Divide into four pieces and roll each into an oval. Spread filling on the four pizzas, leaving a border of about 1.5 cm. Fold edges together and press to seal. Brush with oil and place on parchment-lined tray. Sprinkle pine nuts over pizzas. Bake in preheated oven at 200°C (180°C fan; gas: level 3) for about 15–20 minutes until crisp. Wash, dry, chop parsley and sprinkle over pizzas before serving.
