Ingredients

  • 400 g brown beans (canned; drained weight)
  • 3 cloves garlic
  • 1 tomato
  • 4 sprigs Parsley
  • 2 Organic lemons
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • Cumin

Instructions

    Drain the beans in a sieve, rinse with water and let them drain.

    Peel the garlic and slice into rounds. Quarter the tomato, remove seeds, and dice finely. Wash the parsley, shake dry, pluck leaves, and chop finely.

    Rinse lemon under hot water, grate zest, halve and squeeze juice. Mix lemon zest, juice with olive oil, parsley, garlic, and tomato cubes. Season generously with salt, pepper, and cumin.

    Arrange Turkish bean salad on plates with dressing and serve.
