Turkey with Pumpkin

Ingredients
- 400 g turkey breast fillet
- 300 g pumpkin flesh
- 1 star anise
- Salt
- Pepper (freshly ground)
- 2 tbsp clarified butter
- 100 g whipping cream
- 1 tsp turmeric
- 2 fresh bay leaves (for garnish strips)
Instructions

Cut the pumpkin flesh into bite-sized pieces and cook in boiling salted water for about 10 minutes, then drain and set aside.

Season the turkey breast with salt and pepper. In a oven-safe skillet, sear one side in 1 tbsp clarified butter until golden, flip, and bake in a preheated oven at 180°C for about 12 minutes to finish cooking.

Whisk turmeric into the cream and pour over the meat during the last 3 minutes of baking.

Sauté the pumpkin in the remaining clarified butter for 2-3 minutes, seasoning with salt and pepper.

For serving, slice the turkey breast into thick pieces and arrange on a plate with sauce and pumpkin, garnishing with bay leaf strips and star anise.
