Turkey Strips Over Fried Rice

- 250 g Basmati rice
- 640 g turkey cutlets (4 turkey cutlets)
- 1 Garlic clove
- 1 bunch scallions
- 1 bunch Thai basil
- 2 tbsp oil
- 1 egg
- 4 tbsp light soy sauce
- 1 lemon

Wash the rice in a sieve under running water, then bring to a boil with slightly salted water at about three times the volume and simmer covered over low heat for about 20 minutes. Let it cool completely.

Cut the meat into strips about 2 mm wide. Peel and finely chop the garlic. Clean, wash and slice the scallions into rings. Wash the basil, shake dry and roughly chop the leaves.

Heat oil in a wok. Crack the egg into the wok. Stir yolk and white slightly and cook over medium heat for 2 minutes, turning once, pushing to the side. Heat remaining oil in the wok. Cook garlic and meat over high heat for 3 minutes while stirring. Split the egg with a spatula into strips and mix into the meat. Add the cold rice and herbs, stir-frying together for about 2 minutes. Season with soy sauce. Serve garnished with lemon zest and Thai basil.
